Although chocolate is a multi-billion dollar industry, cocoa farmers in the Ivory Coast, a West African country that supplies almost half of the world’s cocoa beans, are struggling to make ends meet. They earn just a few dollars a day. There are fears that if the Ivorian government does not fulfill its promises to reform the industry and farmers do not start making a profit soon, they will abandon their crops, pushing up chocolate prices around the world. Answer by sj no, hot cocoa mix has sugar and powdered milk in it. Cocoa is just plain cocoa powder. If you did sub, you’d need to cut down the sugar in your recipe, and it wouldn’t be as chocolately as if you used cocoa powder.

When it comes to the cocoa bean, one thinks of its most famous product, chocolate. But to form a bar of chocolate, the cocoa beans must undergo some preparation and cooking. The cocoa beans are left to ferment for several days and then dried, roasted and pressed. A thick paste is formed that is then refined into a liquid. This is chocolate liquor. If the liquid is pressed, it forms a cakey mass, fat free. The extracted fat as cocoa butter and form into a thick paste. The press cake is then cut into pieces and ground finely crushed to a dry powdery residue, as cocoa powder, cocoa also known form. The signature thick nor taste of chocolate is melted because of the powdery mass of powder and the paste-like texture of cocoa butter.
Cocoa powder types
Based on processing techniques can be of two kinds of this powder.When the roasted bean powder is directly used, the resulting taste is more acerbic and bitter, with a raw feel. The course is this powder, known for its distinctive rich flavor and darker color.
Dutch-processed powder of cocoa is treated with an alkali, either the beans with a potassium solution before pressing or pressed powder cake washed treated with an alkali. The result is a sweeter, lighter in color, powder.
